Last night I caught up with my best mates for the Annual Christmas Festivus. The Divine Ms M asked me to be responsible for some hot suggestions, so I whipped up a batch of Hot, Salty, Fishy Chicken Balls.
Thee are really easy to chuck together and will disappear faster than Peter Slipper’s reputation.
You will need the following:
500 grams of chicken mince
1/4 cup of Oyster Sauce
2 cloves of crushed garlic
1 Tablespoon of SR Flour
1 Tablespoon of Fish Sauce
1 Teaspoon Chili Flakes
Half a cup of finely diced coriander
160ml Coconut milk
Soy or Sweet Chili to serve.
Pre-heat your oven to 200 degrees. Get that mofo hot.
Get a workout while mezzaluna-ing a bunch of coriander. The finer you can chop it the better. Flap those arms ladies!
Chuck the coriander into a mixer or processor with all of the other ingredients. Start the mixing process while you lightly spray a mini muffin pan. We own a mini muffin pan….. who knew!
At this stage, Harry wandered into the kitchen and saw that I had the mini muffin tray out and the Kitchen Aid was in full swing, so he asked if he could lick the bowl.
Sure you can Harry!
He was not amused. I would not be either. It looks RANK!
Use 2 teaspoons to fill the mini-muffin tray. Do not overfill. I REPEAT – DO NOT OVERFILL.
Whack them in your hot oven for 15 minutes. When done, your kitchen should start to smell like hot, salty, fishy chicken balls which should, in turn, bring all the boys to your yard.
