Bag Dumps. A post that may just change your life.

Last night I was having a social media whinge about having to cook and why do I use every pan and how I am totally over it. A lot of readers had very helpful suggestions, and then there was one lady, whom we shall call Christy Grove, for indeed that is her name, shared with us what she does….

“Hey hon. I have a consolidated set of slow cooker recipes. You make up the bags in advance, freeze. When ready defrost the night before pop in SC in the morning and done! I have the bulk shopping list too. 14 recipes / bags in total.”

Many members of the Facebook page kinda lost their shit about this idea, and so Christy Grove, that kind-hearted, generous lady, has agreed to share her collected recipes with us. (Some are from Kidspot) She has even put together a shopping list!

And get this…. She just whacks all the raw ingredients into a large zip lock bag, labels them with a Sharpie and sticks them in the freezer. The night before, she will pull out whatever she fancies and defrosts it in the fridge, before whacking it in the slow cooker the following day. She tells me, in the USA that this is called a Dump Bag. She has inspired me to become organised. What a woman. So generous with her time and knowledge today.

Slow Cooker Chinese Beef

Melt-in-the-mouth beef in Asian aromatic spices.

Ingredients
• 1 1/4 kgs chuck steak (beef) fat trimmed
• 3 tbs oil
• 2 onion
• 1 tsp ginger minced
• 3 tsp garlic minced
• 1 tsp ground coriander dried
• 2 tsp Chinese five-spice powder
• 2 whole star anise
• 1 tsp peppercorns
• 100 g brown sugar
• 100 mls soy sauce
• 2 tbs tomato paste
• 250 mls beef stock (liquid)

Method
• STEP 1 Heat 2 tablespoons of oil in a large saucepan and brown the beef. Remove from heat and transfer to a plate.
• STEP 2 Combine onions, ginger, garlic and coriander in a small bowl.
• STEP 3 Heat the remaining oil in the same saucepan and fry onion mix until softened, adding a splash of water to scrape up any beef bits from pan.
• STEP 4 Stir in the five spice, star anise and peppercorns, cook for 1 minute. Add the sugar, soy sauce and tomato paste.
• STEP 5 Return the beef and any juices back to the pan and pour in the beef stock. Bring to the boil then add to the slow cooker.
• STEP 6 Cook for 4 hours on high or 8 hours on low.

Slow Cooker Lamb Tagine

Easy lamb tagine that tastes like you have made a huge effort.

Ingredients
• 500 g diced lamb
• 1 tsp fresh ginger
• 2 cloves garlic crushed
• 1 red onion sliced
• 1 tsp ground turmeric
• 1/2 tsp ground cinnamon
• 2 tsp ground cumin
• 1 tbs honey
• 2 tsp sugar
• 400 g canned diced tomato
• 1 cup chicken stock (liquid)
• 1 cinnamon stick
• 10 prune
• 1/4 preserved lemon diced
• 1/4 cup almond meal
• 1 tbs parsley chopped
• 1 tbs coriander chopped

Method
• STEP 1 Into slow cooker, add all but the last 5 ingredients, mix well.
• STEP 2 Set slow cooker to low and leave to cook for 8-10 hours.
• STEP 3 Half an hour before serving, stir through prunes, preserved lemon, almond meal, parsley and coriander.
• STEP 4 Serve with cous cous.

Slow Cooker Salsa Chicken

This is a tasty, low fat chicken meal made with ingredients in your cupboard. You also don’t have to cook the chicken first.

Ingredients
• 500 g chicken thighs skinless fat trimmed
• 1 cup salsa
• 410 g canned diced tomato
• 2 tbs taco seasoning
• 1 onion large diced
• 2 celery stick diced
• 1 carrot large grated
• 1/2 cup water
• 3 tbs sour cream optional
• 8 cup rice *to serve

Method
• STEP 1 Layer the chicken on the base of the slow cooker.
• STEP 2 Sprinkle with taco seasoning. Add the vegetables then salsa then water.
• STEP 3 Set slow cooker to low and cook for 7 hours.
• STEP 4 Serve with rice.

Slow Cooker Massaman Curry

Mild Thai curry with a nice flavour. This is our family’s favourite slow cooker recipe. Easy to make.

Ingredients
• 600 g chuck steak (beef) cubed
• 300 g chat potato quartered
• 1 brown onion finely chopped
• 210 g massaman Thai curry paste
• 2 tbs plain flour
• 2 cup chicken stock (liquid)
• 400 mls coconut cream
• 2 tbs fish sauce
• 1 tbs lemon juice
• 1 tbs brown sugar
• 2 cup white rice

Method
• STEP 1 Place onion and potatoes in slow cooker. Add curry paste, coconut cream and mix.
• STEP 2 Add chicken stock, fish sauce, lemon juice and brown sugar. Mix again.
• STEP 3 Place flour in plastic bag then add the steak and shake until meat is coated in flour. Add steak to slow cooker.
• STEP 4 Cook in slow cooker on low for 8 hours. Serve with rice.

Slow Cooker Yellow Beef Curry

A simple, sweet, mild curry made with beef – but could just as easily be made with other meat, seafood or even vegetarian.

Ingredients
• 500 g beef casserole diced
• 4 potato diced
• 1 onion diced
• 1 red capsicum diced
• 400 mls coconut cream
• 1/2 cup beef stock (liquid)
• 1 tbs ginger crushed
• 3 tbs yellow Thai curry paste
• 3 tsp garlic crushed
• 1 tbs fish sauce
• 2 tbs brown sugar
• 1 tbs cornflour
• 1 tbs lemon juice

Method
• STEP 1 In the slow cooker combine beef, potatoes, onion, capsicum, coconut cream, stock, ginger, curry paste, garlic, fish sauce and brown sugar.
• STEP 2 Cook on slow for 8 hours.
• STEP 3 Mix cornflour with juice from the curry into a paste and add to the curry.
• STEP 4 Cook on high for a further 30 minutes with the lid off to allow the sauce to thicken.
• STEP 5 Stir in lemon juice and serve with boiled rice.

Slow Cooker Indian Beef and Tomato Curry

A tasty and tender slow cooker curry.

Ingredients
• 750 g chuck steak (beef) diced
• 2 onion chopped
• 3 tbs curry paste large
• 410 g canned diced tomato
• 1 cup beef stock (liquid)
• 1 1/2 cup mixed vegetables as desired chopped
• 2 tbs plain flour salted

Method
• STEP 1 Toss meat in seasoned flour and brown if desired in a frypan.
• STEP 2 Add all ingredients to slow cooker, potatoes first if using, then onions and meat.
• STEP 3 Cook on low for 8-10 hours.

Notes
Tikka Masala and Rogan Josh are good curry pastes. Stir well before serving. Yoghurt or cream can be added at the end if desired. Even those who don’t like curry have enjoyed this dish. Serve with rice, mashed potatoes or creamy polenta. Dice your steak into 1.5 cm cubes.

Slow Cooked Lamb Casserole

Slow cooked lamb casserole in a tomato based sauce.

Ingredients
• 1 1/2 kgs diced lamb
• 1 cup vegetable stock (liquid)
• 1 cup boiling water
• 1 bunch spring onion sliced
• 2 potato large quartered
• 2 carrot large quartered
• 500 g frozen peas and corn
• 425 g can condensed tomato soup
• 425 g Italian-style canned diced tomato
• 1 tbs worcestershire sauce
• 2 tsp curry powder
• 3 garlic clove crushed
• 1 tsp pepper *to taste
• 1 tsp oregano *to taste

Method
• STEP 1 Dust lamb with plain flour and add sauces to slow cooker.
• STEP 2 Add lamb and all other ingredient
• STEP 3 Cook on low heat for 8-10 hours.

Slow Cooked Beef Goulash

A slow cooked version of beef goulash.

Ingredients
• 1 kg round steak (beef)
• 2 tbs plain flour
• 1/2 tsp paprika
• 1 bay leaf
• 3 tsp thyme
• 1/4 tsp parsley chopped fresh
• 1 beef stock cube
• 2 pinches salt and pepper
• 2 leaves basil
• 1 garlic clove crushed
• 1 onion chopped
• 1 cup canned chopped tomato
• 1 cup sour cream

Method
• STEP 1 Coat the steak in flour and brown with the onions and garlic in a fry pan with a little butter.
• STEP 2 Once browned, place in the slow cooker and add all remaining ingredients, except the sour cream.
• STEP 3 Stir well, cover and cook on low for 6-8 hours or on high for 5 to 6 hours.
• STEP 4 Half an hour before serving, thoroughly stir in the sour cream.

Beef Chilli

A mildly hot beef chilli which is probably not for chilli purists but nevertheless still tastes pretty good. I think so anyway. Heat can of course be adjusted according to taste.

Ingredients
• 1 kg diced beef
• 2 onion large chopped into pieces
• 1 green capsicum large diced
• 1 red capsicum large diced
• 2 long fresh green chilli sliced
• 440 g canned diced tomato
• 440 g red canned kidney beans drained
• 440 g canned corn drained
• 1 tbs garlic crushed
• 1 1/2 tsp ground cumin
• 1 tsp black pepper
• 1 tbs smoked paprika
• 1 tbs beef stock (powder)
• 1/2 tsp cayenne pepper
• 1 tsp tabasco sauce
• 1 tsp chilli powder
• 1 tbs white vinegar
• 1 tsp ground coriander
• 1 tbs honey
• 2 tsp cornflour
• 1 cup water

Method
• STEP 1 Spray a heavy-based saucepan with cooking spray until base is well-coated.
• STEP 2 Heat on high then add beef, salt, pepper, chilli powder, cayenne pepper and garlic. Fry, stirring until lightly browned.
• STEP 3 Add onions, chillies, capsicum, cumin, coriander and paprika and mix through.
• STEP 4 Cover and cook over low heat, stirring occasionally, until onions are soft.
• STEP 5 Add tomatoes, honey, Tabasco, beef stock powder, vinegar and water
• STEP 6 Cook on low for 6 hours, stirring occasionally.
• STEP 7 Add beans and corn and simmer for a further 10 minutes.
• STEP 8 Add cornflour (mixed with a small amount of water) and stir while simmering until thickened, then serve.

Slow Cooked Beef Ragu

Easy, slow cooked beef ragu that makes enough for 4 generous serves – slow cooker magic!

Ingredients
• 500 g topside steak (beef)
• 1 tbs olive oil
• 1 tbs plain flour
• 1 pinch salt and pepper
• 3 celery stick diced
• 2 carrot diced
• 2 baby onion diced
• 3 cloves garlic crushed
• 1 thyme
• 1/2 cup red wine
• 1/4 cup balsamic vinegar
• 1 tbs spice mix
• 1 tbs tomato paste
• 400 g tomato diced
• 250 mls beef stock (liquid)
• 1 cup mushrooms sliced
• 1 tbs cornflour optional

Method
• STEP 1 Place beef in plastic bag with flour and some salt and pepper to dust.
• STEP 2 Heat oil in pan, brown the meat and set aside in bowl covered with foil.
• STEP 3 Heat more oil, cook onion and garlic for a few minutes. Add celery and carrot and cook a few more minutes until soft. Add thyme, vegeta, tomato paste, tomatoes, beef stock, vinegar and wine and cook for a minute or two.
• STEP 4 Place the mixture into the slow cooker together with the beef and sliced mushrooms.
• STEP 5 Cook on low for approximately 7 hours and if preferred, use some cornflour and water to thicken.
• STEP 6 Shred the beef pieces using knife and fork before serving.

Chicken Cacciatore

So easy to make and very tasty. This is made in the slow cooker.

Ingredients
• 3 onion sliced
• 1 kg skin-off chicken breast fillet
• 1 punnet cherry tomato
• 4 garlic clove minced
• 1/2 cup dry white wine
• 2 tbs capers
• 20 pitted kalamata olives
• 1 bunch parsley fresh stems trimmed roughly chopped

Method
• STEP 1 Place sliced onion in slow cooker and cover with chicken.
• STEP 2 Add tomatoes, salt, pepper, garlic and white wine to slow cooker.
• STEP 3 Cover and cook on low for 6 hours until chicken is tender.
• STEP 4 Stir in capers, olives and herbs just before serving.

Notes
Traditionally served on pasta. Chicken thigh can be used. Basil can be used.

Slow Cooked Lamb Shanks

A delicious winter favourite in our house. Traditionally I have cooked it in oven but have made it in slow cooker.

Ingredients
• 8 Frenched lamb racks
• 1/2 cup plain flour to coat
• 1 tbs olive oil
• 1 cup red wine
• 3 cup beef stock (liquid)
• 4 spring onion halved
• 4 garlic clove peeled
• 6 bay leaf
• 2 sprigs fresh rosemary
• 1 tbs black peppercorns
• 1 tbs cornflour

Method
• STEP 1 Dust shanks in flour.
• STEP 2 Heat olive oil in large pan and brown shanks.
• STEP 3 Place shanks and remaining ingredients into slow cooker.
• STEP 4 Cook on low for 6 hours or until shanks are tender and meat about to fall off bone.
• STEP 5 To thicken remove cooked shanks and add cornflour to desired thickness.
• STEP 6 Serve with creamy mashed potato and sauce.
